Owner Ramona Koonings

Ramona Koonings is a Brabant wedding dress designer, entrepreneur, TV personality, industry leader and a true family man. When Ramona started working as a coffee girl in the bridal store of Mr. and Mrs. Koonings at the age of 14, it was soon clear that she was brimming with ambition. At the age of 17, Ramona took over Ineke Koonings with her mother.

Ramona took the first step in her vision to innovate and inspire bridal fashion with the opening of Koonings. With a unique collection of dresses and personal attention, she created a place here where every bride feels special. As an extension of her dream, she then created Castle East. The location also houses her new restaurant Mon Rêve.

“From an early age, I stood next to my mother in the kitchen watching and trying to help her prepare old-fashioned Limburg flans. At the age of 14, I started working in a large hotel as a dishwasher and kitchen assistant. Over the years I worked my way up and developed into a chef.”

Mick’s cooking style is unique and distinct. With his roots in classic French cuisine, he creates dishes that stand out through modern techniques, Asian influences and surprising flavor combinations. His career has taken him past several castles in Limburg, but now he brings his culinary vision to life in the kitchen of Mon Rêve.

“For several years I have been working under chef Mick, with whom I continue to develop myself and our team continuously. Together we have made great strides and continue to build on our style and quality every day.”

Mitch’s passion for cooking was born out of his interest in fine dining cuisine. His ambition is to keep growing together with the team, pushing boundaries and surprising our guests time and again with special and tasty dishes.

“About 15 years ago I didn’t know exactly what direction I wanted to go in, but eventually I found my passion in the profession of cooking, a choice for which I am very grateful to this day.”

Dion has continued to develop by working with various chefs and gaining experience at various restaurants in the region. These experiences not only shaped him as a chef, but also further developed his views on taste, experience and hospitality….
