In the serene ambiance of Mon Rêve, we invite you on a culinary journey of discovery. With carefully selected, seasonal ingredients, we create dishes that excite the senses.

“I was five years old when I already dreamed of one day becoming a chef. Still, I had to wait a while before I could take my first steps in the profession. I did so at the age of thirteen at my cousin’s restaurant. What started in the dishwashing kitchen soon became flambéing dishes at the table.”

He continued his career at In De’n Dillegaard. One thing led to another and soon they had a Bib Gourmand to their name, followed by the Michelin star in 2004. But his passion for artisanal Italian pasta cuisine led to a unique decision: to surrender his Michelin star to focus entirely on making authentic pasta.

“From an early age, I stood next to my mother in the kitchen watching and trying to help her prepare old-fashioned Limburg flans. At the age of 14, I started working in a large hotel as a dishwasher and kitchen assistant. Over the years, thanks to my passion and perseverance, I worked my way up and developed into a chef.”

Mick’s cooking style is unique and distinct. With his roots in classic French cuisine, he creates dishes that stand out through modern techniques, Asian influences and surprising flavor combinations. His career has taken him past several castles in Limburg, but now he brings his culinary vision to life in the kitchen of Mon Rêve.

“As a small child, I was always busy with pans and ladles. As I got a little older, I started going into my mother’s kitchen more and more to watch and ‘help’. As a teenager, I sometimes cooked for the family. Admittedly, I sometimes used packets, but I did it.”

Now, with 34 years of experience and his own culinary vision, Marcel stands as sous chef in our Mon Rêve kitchen, cooking with pure ingredients and craftsmanship.
